HOT RATATOUILLE
1/2 medium zucchini, sliced thinly 1 small green pepper, sliced 1/2 small eggplant, peeled and sliced (optional) 1/2 cup fresh, sliced mushrooms 1/2 cup prepared spaghetti sauce (low fat, chunky or garden style) 1 tsp. minced garlic 1 tsp. oregano 2/3 cup low fat, shredded mozzarella cheese 1/8 cup fat free parmesan cheese
Combine all ingredients except cheeses in a 9-inch square casserole dish.
Microwave on high for 3-4 minutes.
Sprinkle with cheese. Microwave for one more minute.
