HAM AND BEANS

1 pound dried Great Northern Beans
6 cups water
2 cups cubed ham
1 medium onion, chopped
1 cup sliced celery
1 cup sliced carrots
1 tablespoon dried parsley
1 bay leaf
1/2 teaspoon salt
1/8 teaspoon pepper

Soak beans in 6 cups of water overnight, drain.

Combine beans, water, ham, onion, celery, carrots, parsley, and bay leaf in slow cooker.

Cover and cook on HIGH for 8-9 hours or on LOW for 12-14 hours. Remove bay leaf. Season with salt and pepper.

Yield: 6-8 servings
