APPLE BUTTER BREAD
1 1/2 cups all-purpose flour 1/2 cup whole wheat flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon cinnamon 1 egg, beaten 1 cup apple butter 1/2 cup sugar 3/4 cup buttermilk 1/4 cup margarine or butter, melted 1/2 cup golden raisins 1/4 cup finely chopped walnuts, optional
Preheat oven to 350 degrees F. Lightly coat bottom only of a 9x5x3-inch loaf pan with cooking spray.
In medium bowl, thoroughly combine all-purpose flour, whole wheat flour, soda, baking powder and cinnamon; set aside.
In large bowl, combine egg, apple butter, sugar, buttermilk and margarine; beat until well blended. Stir in raisins and walnuts.
Add dry mixture to wet mixture, stirring just until dry ingredients are moistened. Pour batter into prepared pan.
Bake 60 to 65 minutes or until a toothpick inserted in center comes out clean. Let cool 15 minutes, remove from pan and cool completely on a wire rack.
Makes 1 loaf with 32 (1-ounce) servings
