Zama De Pasole Verde (Green String Bean Soup) 2 lb String beans, cut 3 lb Spring chicken, cut up 2 tbl Lard 1 Onion,large,chop & saute 1 1/2 tbl Flour 1 tsp Red pepper 1 Garlic clove 1 cup Onion, small, minced 1 Parsley, and dill,chop fine 3 qt Water
Place lard, onion and flour in a pot, saute, add red pepper, water, chicken and cook. Cook cut up green beans, garlic, and onion in 4 ounces water separately for a half hour, then add to chicken pot and cook for 45 min or more. Add parsley and dill last.
