MACADAMIA CHICKEN SALAD

Servings: 4-6

4 cups cooked cubed chicken
1 (20 oz.) can pineapple chunks, drained
1 cup Macadamia nuts, halved or cut in quarters*
1/2 cup thinly sliced celery
1 cup mayonnaise
1/4 tsp. ginger

In a large bowl, combine first 4 ingredients.

Combine mayonnaise and ginger, mixing well. Add just enough mayonnaise to moisten. Cover and chill to blend flavors.

*Can substitute cashews or pecan halves.
