RICOTTA BALLS

Note from source: This is a family recipe, I just sort of wing it. I will try to make it understandable.

FOR THE SAUCE:
1 onion, finely chopped
chopped garlic to taste (optional)*
olive oil
1 large can tomato juice
1 large can diced tomatoes
FOR THE RICOTTA BALLS:
1 (15 oz) container ricotta
1 cup cracker crumbs or bread crumbs (i use saltines)
1/2 cup grated parmesan or Romano cheese (packed)
2 eggs, beaten
chopped Italian parsley (to taste)
coarsely ground black pepper (to taste)

FOR THE SAUCE:
Saute onion and garlic in a little olive oil. Add tomato juice and diced tomatoes. Simmer.

FOR THE RICOTTA BALLS:
Mix ricotta and next 5 ingredients and shape into balls. Place gently into simmering sauce. When they are done they rise to the top. You can gently roll them over.

Serve them on the side with a meal, on pasta, or as an appetizer from a crockpot.

*The original recipe doesn't call for garlic in the sauce, but it can't hurt!!
