SCOTT BAIO'S GRANDMOTHER'S RICOTTA PUFFS
1 (1 lb.) container ricotta cheese 1 cup flour 2 eggs, beaten 2 tbsp. sugar 1 tbsp. vanilla 1 tsp. baking powder powdered sugar (for topping) Heat oil in a deep saucepan or fryer to 375.
Mix together all ingredients except powdered sugar.
Carefully, add a tbsp. of mixture at a time to hot oil. Within a minute, balls will form puffs and turn a golden brown.
Drain on paper towel and sprinkle with powdered sugar. Serve warm.
