GERMAN HERRING SALAD WITH SOUR CREAM (HERINGSTOPF MIT SAURER SAHNE)
FOR THE SOUR CREAM SAUCE: 1 cup dairy sour cream 1/2 cup plain yogurt juice of 1/2 freshly squeezed lemon 1/4 teaspoon granulated white sugar FOR THE SALAD: 2 small onions, thinly sliced 2 tart apples, peeled, cored, sliced into thin wedges 8 marinated herring fillets TO SERVE: 2 teaspoons fresh dill or 1/2 teaspoon dried dillweed
Mix together the ingredients for the sour cream sauce. Mix with the salad ingredients.
In a dish arrange the herring and apple-onion mixture in layers. Cover tightly and marinate in your refrigerator at least 5 hours.
Sprinkle with the fresh dill or dried dillweed just before serving.
