SEA SCALLOPS IN SWEET CHILE SAUCESource: Martin Yan Quick and Easy CookbookMakes 4 servings 2 Tablespoons fresh lime juice 1 Tablespoon fish sauce 1 teaspoon grated ginger 1 pound sea scallops 2 Tablespoons vegetable oil 1/4 cup sweet chile sauce 2 Tablespoons chicken broth 1/4 cup chopped fresh cilantro (for garnish) Combine lime juice, fish sauce and ginger in a bowl and mix well. Add scallops and stir to coat evenly. Let stand for 10 minutes. Drain scallops and pat dry with paper towels. Heat a wide, nonstick frying pan over medium-high heat until hot. Add oil, swirling to coat bottom. When oil is hot, add scallops and pan-fry, turning once, until golden-brown, about 2 minutes on each side. Meanwhile, in a small saucepan, combine sweet chile sauce and broth. Bring to a simmer over medium-high heat and simmer until sauce thickens slightly, about 2 minutes. Transfer scallops to a serving plate. Drizzle with the chile sauce, garnish with cilantro and serve.
