IN AND OUT OF SEASON FRUIT SALAD Yield: 8 to 10 servings
4 to 5 cups sliced fresh peaches 1/2 honeydew melon, cut into balls or chunks 1 (1 pound) can peach halves, drained 1 (1 pound) can pineapple, chunks, drained (spears are prettier if available) 1 (1 pound) can pear halves, drained 2 cups fresh grapes, seeded and cut 2 cups cantaloupe or melon balls 2 cups any other fruit in season 1 cup fresh blueberries, if in season
Combine all fruit in large, lettuce-lined bowl; toss gently in mix. Serve dressing separately.
WHIPPED DREAM DRESSING FOR FRUIT SALAD Yield: about 1 1/2 cups
This is delicious dressing for all kinds of fruit salads.
1 (3 ounce ) package cream cheese, softened 2 tablespoons mayonnaise 6 ounces, pineapple, peach, or apricot preserves 1 tablespoon freshly squeezed lemon juice 1/4 teaspoon curry powder 1/2 cup heavy cream, whipped
Blend cream cheese and mayonnaise by hand until smooth. Stir in preserves, lemon juice, and curry powder. Chill until about an hour before serving.
Stir in whipped cream and refrigerate until serving time.
