This is my Mom's Pumpkin Pie Filling and I think that she got it from her Mom. My family loves it! Since he was 10, my eldest son (now 37) has been buying a whole pie from me whenever I make it so that he can eat the whole thing by himself! LOL
MOM'S PUMPKIN PIE FILLING
2 eggs 1/2 cup brown sugar 2 tbsp corn syrup 1 1/2 cups pumpkin, cooked and mashed or canned 1 teaspoon cinnamon 1/4 teaspoon ground ginger 1/4 teaspoon ground mace 1/4 teaspoon ground allspice 1/4 teaspoon ground nutmeg 1/2 teaspoon salt 1 tablespoon cornstarch (a bit more if you like a very firm pie) 1 1/4 cup milk 1 1/2 tablespoons butter 1 deep pie shell or 2 regular 9 inch pie shells
Whisk eggs, add sugar and then the corn syrup. Mix together well. Add the pumpkin, spices, salt and cornstarch. Mix well.
Heat the milk with the butter. When butter is melted, milk is ready. Stir into the pumpkin mixture. Pour into a deep Pie shell or 2 regular 9 inch pie shells.
Bake at 375F for 50-60 minutes, until knife inserted in center comes out clean. I cover the pie edge with tin foil for the first 40 minutes.
