I made this banana muffin recipe as written but must have done something wrong. They came out rather small and heavy/dense in feel. They were moist and fine on the inside. Also, I made the mistake of using paper liners for the muffins and I'm not able to peel the paper off the muffin. I shouldn't have used paper - I realized afterward. Any suggestions for a lighter more flakey muffin in the future? I have made banana muffins before using different recipes and haven't had this type of result. Thanks.
