TARRAGON PASTA AND TURKEY SALAD
1 pound Rotini, Twists or Spirals, uncooked 8 oz. smoked turkey, chopped (about 1 1/2 cups) 1 cup sliced celery 1 1/2 cups seedless red grapes, cut into halves 1 cup sliced scallions (white and green parts) 1 cup non-fat or reduced-fat mayonnaise 1/3 cup non-fat or reduced-fat sour cream 1 1/2 tbsp. chopped fresh tarragon or 1 tsp. dried tarragon 1 tbsp. lemon juice Salt and pepper to taste
Prepare pasta according to package directions; drain. Rinse under cold water and drain again.
In a large bowl, stir together the pasta, turkey, celery, grapes and scallions.
In a small bowl, stir together the remaining ingredients. Toss pasta with dressing. Add salt and pepper, if desired.
Serve immediately or cover and chill. Serves 6 Source: National Pasta Association
