Apple Granola (16 servings) 1 1/2 c. quick oats 1 1/2 c. old fashioned oats 2 Tbsp. sugar 3 Tbsp. chopped walnuts 1/2 tsp. salt 1 Tbsp. vegetable oil 6 Tbsp. water 1/2 tsp. vanilla 1/2 c. cored and finely chopped apple Combine oats, sugar, walnuts, and salt in a bowl and mix thoroughly. Then mix the oil in well. In a separate bowl combine the water and vanilla. Pour liquids into dry ingredients, mixing just enough to moisten evenly.
Mix in the apples. Spread granola out evenly onto a cookie sheet. Bake at 250ºF until dry, stirring every 20 minutes. Remove from oven and allow granola to cool in pan. Store in airtight container in a cool place.
Good served with tofu milk, fruit juice, applesauce, or other fruit sauce.
Variations:
-Add 1/4 cup shredded coconut to oat mixture before baking -Add 1/2 cup raisins or chopped dates to granola after it has been baked.
