During our Weight Watchers days, a neighbor of mine used to make this 2-serving diet soup. I still enjoy it today.
WW SOUP A LA BERTA
2 teaspoons diet margarine 2 teaspoons flour 3/4 cup water 1 teaspoon instant chicken bouillon granules or 1 cube chicken bouillon 1 small zucchini, cut into julienne strips, 1x1/4-inch 1 green onion, sliced 1 can (8 1/4 ounces) tomatoes, drained and coarsely chopped 6 ounces small shrimp, cooked and peeled 1/2 cup evaporated skim milk 1/8 teaspoon thyme, optional Minced parsley to garnish
Melt margarine in top half of double boiler over boiling water. Add flour and stir until a paste is formed.
Stir in water gradually and add bouillon. Cook and stir until thickened.
Add zucchini and green onion. Cover and simmer 5 minutes.
Stir in remaining ingredients except parsley. Heat until hot.
Garnish each serving with chopped parsley.
