GLAZED CHOCOLATE MINI LOAVES
Mini loaves of rich chocolate bread are glazed with additional chocolate.
BREAD INGREDIENTS: 2/3 cup firmly packed brown sugar 1/2 cup LAND O LAKESŪ Butter, softened 1 cup mini semi-sweet real chocolate chips, melted 2 eggs 2 teaspoons vanilla 2 1/2 cups all-purpose flour 1 1/2 cups applesauce 1 teaspoon baking powder 1 teaspoon baking soda 1/2 cup mini semi-sweet real chocolate chips GLAZE INGREDIENTS: 1/2 cup mini semi-sweet real chocolate chips 1 tablespoon LAND O LAKESŪ Butter 5 teaspoons water 1/2 cup powdered sugar 1/4 teaspoon vanilla
Heat oven to 350 degrees F. Greased five (5 1/2x3-inch) mini loaf pans or aluminum foil pans.
Combine brown sugar and 1/2 cup butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes).
Add 1 cup melted chocolate chips, eggs and 2 teaspoons vanilla; continue beating until well mixed (1 to 2 minutes).
Reduce speed to low. Add flour, applesauce, baking powder and baking soda; beat until well mixed (1 to 2 minutes).
Stir in 1/2 cup chocolate chips by hand. Spoon batter into prepared pans.
Bake for 35 to 42 minutes or until center crack is dry when touched. Cool 10 minutes. Remove from pans. (Do not remove if using aluminum foil pans.)
FOR THE GLAZE: Meanwhile, combine 1/2 cup chocolate chips, 1 tablespoon butter and water in 2-quart saucepan. Cook over low heat, stirring constantly, until smooth (1 to 2 minutes). Remove from heat. Stir in powdered sugar and 1/4 teaspoon vanilla. Drizzle over each loaf. Cool completely.
VARIATION
GLAZED CHOCOLATE MINT MINI LOAVES: Omit 1 teaspoon vanilla in bread and 1/4 teaspoon vanilla in glaze. Add 1/2 teaspoon mint extract to bread and 1/4 teaspoon mint extract to glaze.
TIP: Bread can be frozen unglazed. Remove from freezer; bring to room temperature before glazing.
