CHICKEN PIZZAIOLA
2 lbs. chicken breast and thighs 4 large baking potatoes, quartered 1 can peas, drained 1 large onion, sliced 1 can mushrooms, drained 1 large (28 oz) can plum tomatoes 4 Tbsp. COLAVITA extra virgin olive oil 4 Tbsp. parmesan cheese 1 tsp. oregano salt/pepper
Preheat oven to 375 degrees F.
Arrange chicken, potatoes, peas, onion and mushrooms in a roasting pan.
Pour tomatoes over top. Add olive oil, parmesan, oregano, salt, and pepper.
Bake in a preheated oven at 375 degrees for 1 hour 15 minutes.
