EGGCEPTIONAL CHEESE 'N MAC
8 ounces (2 cups) elbow macaroni 1 package (8 ounces) shredded sharp Cheddar cheese, divided* 4 eggs 1 can (12 ounces) fat-free evaporated milk 1 cup lean cooked ham, cubed
Preheat oven to 350 degrees F. Evenly coat a 11x7-inch dish with cooking spray.
Cook macaroni according to package directions. Drain and return to pan.
Stir in 1 1/2 cups cheese until thoroughly mixed. Stir in eggs and milk until thoroughly mixed. Stir in ham. Pour into prepared pan. Sprinkle top with remaining 1/2 cup cheese.
Bake until lightly browned and set, about 50 minutes.
*Hint: For a creamier version, substitute a 15-ounce jar of processed cheese for the Cheddar cheese.
