This recipe is from my Mother and I make it often. Needs no cooking! It is my eldest son's favorite. Always one of the first gone off the Christmas Cookie Plate!
PEANUT BUTTER BALLS
1 cup peanut butter 1 cup icing sugar (powdered sugar) 1/2 cup dates finely chopped 1/4 cup butter 2 tablespoons cream 1 teaspoon vanilla pinch salt
Mix well. Roll into balls, and then roll in fine, shredded coconut or fine chocolate. They can be dipped in warm chocolate too. Keep in a small cookie tin in a cool place. (I keep them in the fridge.) Can be made ahead and frozen.
