Tapa: Tortilla Murciana (Murcia Omelette)
3 tomatoes, peeled, seeded and chopped 4 sweet red peppers deseeded and cut into fine strips 1 small aubergine peeled and diced 6 eggs oil
Heat the oil in a frying pan and sautee the tomatoes, peppers and aubergines for 10 minutes. Beat the eggs in a large bowl with a little salt (if using) then add the fried tomato mixture and stir to coat. Add a little more oil to the pan and pour in the egg mixture, and cook gently until golden and almost set. Turn the omlette over (or put under a grill) to brown the otherside. Serves 6
