Queso Frito
9 ounces sheep's-milk cheese Salt, pepper 3 tablespoons chopped herbs (parsley and thyme) 4 garlic cloves, crushed flour 1 egg and 1 egg yolk, beaten together oil for frying
Cut the cheese into eight slices of equal thickness and season with salt and pepper. Mix the garlic with the herbs and spread the mixture on both sides of the cheese slices. Heat the oil to 360°. Dredge the cheese slices in flour and dip in the egg. Take care that the flour coating is well soaked with the egg mixture. Deep-fry for 2-3 minutes. Drain in paper towels.
