Rice with Pork Serves 6
1/2 lb. pork meat 3 cloves garlic 1 onion 1 green pepper 1 can tomato sauce 1 can red peppers 2 cups water 1 cup dry wine 1 tbs. salt 1/4 tsp. pepper 2 cups rice 1 small can petit pois
Cut pork into 2" cubes. Separate fat, chop finely and fry in shallow casserole to remove grease. Remove the crackling and fry the garlic until golden (fat should measure between 1/3 and 1/2 cup). Fry the pork and when brown add the chopped onion and then the chopped green pepper and the liquid from the peas. When liquid boils, add the washed rice and cook cover medium heat until it begins to dry. Finish cooking over low heat or in 300ºF oven. Serve garnished with remaining red peppers and petit pois.
