Oriental Sesame Noodles
2 Tbsp. sesame oil 4 large, boneless, skinless chicken breast halves, sliced into strips 1 bunch green onions, chopped 1 red bell pepper, chopped 1 head bok choy, with stems removed, or cabbage leaves, cut into strips 1 Tbsp. sesame seeds 12 oz. oriental wheat noodles TO SERVE: 1/2 cup roasted cashews, optional 1 tsp. salt, optional
In a large skillet, heat sesame oil over medium heat. Saute chicken for 5 to 7 minutes until browned and liquid is gone.
Add onions and pepper; cook 3 minutes longer.
Add bok choy or cabbage leaves and sesame seeds; cook an additional 3 minutes.
Meanwhile, cook noodles according to package directions.
TO SERVE: Combine the cooked noodles with chicken and, if desired, cashews and salt; serve immediately. Serve with soy or teriyaki sauce on the side.
