I make this recipe in double (or even triple!) for get togethers, BBQ's, etc. I make is as a single recipe (8 servings) for a great side dish.
ANOTHER HASHBROWN CASSEROLE
1 can of condensed cream of chicken soup 1 1/2 cups shredded cheese (I use the Mexican mixed) 1 (8 oz) container sour cream 1 stick (1/2 cup) butter, sliced thin 1 bag of frozen hashbrowns, thawed 1 package cubed ham (optional)* 1 bag of low salt potato chips, crushed well 1/2 stick butter, melted.
Combine soup, cheese, sour cream, and sliced butter in a large bowl and mix well.
Stir in the hashbrowns and ham (optional) until well combined. Transfer to a casserole dish.
Sprinkle the potato chips all over the top (it should be well covered with the chip crumbs). Drizzle the melted butter over the top and
Bake in a 350 degree oven for an hour.
This can be served at room temperature; it sits out well at gatherings. I NEVER have leftovers!!!
*You may add a package of cubed ham to this recipe for extra flavor.
