SALMON WITH TAMARIND, PASSION FRUIT AND SESAME SEED SAUCE
FOR THE SAUCE: 8 oz. tamarind juice 8 oz. passion fruit juice 4 small sweet red peppers, chopped 1 small piece fresh ginger 1 garlic clove, chopped 1 tsp. chopped cilantro 2 tsp. water 2 tsp. demi glaze prepared 1 tsp. soy sauce dash of sugar sesame seeds FOR THE SALMON: oil 1 salmon filet TO SERVE: 2 tsp. butter
TO PREPARE THE SAUCE: In a pot, reduce tamarind, passion fruit, ginger, garlic, sweet pepper, cilantro with a little water. Cook at low heat for 15 minutes and strain.
Add demi glaze, soy sauce, sugar, and sesame seed to taste.
TO PREPARE THE SALMON: Preheat oven to 375 degrees F.
In a hot oiled oven-proof pan, sear the salmon on both sides.
Pour the sauce over the salmon and finish cooking in the 375 degree oven for 5 minutes.
TO SERVE: Add a little butter when serving to give the dish some shine.
