FOR THE MEAT SAUCE: 2 lbs. ground beef 1 medium onion, chopped 2 tsp. minced garlic 2 cans (12 oz. each) tomato paste 2 cans water 2 tsp. basil 2 tsp. oregano FOR THE NOODLES: 1 box lasagna noodles TO ASSEMBLE THE LASAGNA: 1 large container of cottage cheese 1 1/2 lbs. mozzarella cheese 1 cup grated parmesan cheese
TO PREPARE THE MEAT SAUCE: Brown ground beef, onion, and garlic. Drain grease.
Add tomato paste plus two can of water, basil, and oregano. Simmer 30 minutes.
TO PREPARE THE NOODLES: Bring water to a boil. Add noodles. Boil ten minutes, drain, rinse with cold water.
TO ASSEMBLE THE LASAGNA: - Lightly grease a large casserole pan. - Cover bottom of pan bottom LIGHTLY with meat sauce.* - Layer with 3 noodles. - Spread thin layer of cottage cheese. - Next add a layer of mozzarella. - Add another THIN layer of meat sauce. - Sprinkle generously with Parmesan cheese. - Repeat once more, but leave enough noodles to cover top of casserole and enough meat sauce to lightly cover noodles.
Bake at 375 degrees for 30 minutes.
* Note: always be very stingy with the meat sauce as there is just enough to spread on the layers and top.
