Avocado, Tomato, Basil and Mozzarella Salad
3 Avocados halved Fresh lime or lemon juice Extra virgin olive oil (as needed) Balsamic vinegar Salt (as needed) Fresh ground pepper Mozarella cheese, sliced 1 cup large fresh basil leaves 3 ripe medium tomatos
Cut each avocado half into 5 or 6 slices about 3/8 inch thick.
Cut each Tomato into 5 or 6 slices.
Arrange in a fan on a plate, alternating, avocado, mozzarella, basil and tomato slices.
Drizzle with olive oil.
Splash with balsamic vinegar.
Lightly sprinkle with salt and fresh ground pepper.
