Avocado Loaf Cake
3/4 c Shortening; creamed 2 c Sugar 3 Eggs 2 c Sifted all-purpose flour 3 ts Cinnamon 3/4 ts Salt 3/4 ts Allspice 2 ts Vanilla 1 1/2 ts Baking soda 1 1/2 c Pureed avocado (2 average size) 3/4 c Buttermilk 1/2 c Walnuts; chopped 3/4 c Raisins Corn syrup (optional) 1/2 c Walnuts; chopped (optional)
Preheat oven to 350 degrees F. Mix sugar and shortening. Beat eggs slightly; stir into shortening mixture; add half of flour; beat until smooth; add rest of flour, a little at a time; beat until well-mixed. Place all other ingredients in separate bowl (save last ingredient for sprinkling on top, if desired), blend and add to flour mixture.
