LITTLE CLAMBAKES

1 (8 oz) pkg cream cheese, softened
1 (8 oz) can minced clams, well drained
1 tbsp bottled onion juice
1/2 tsp liquid red pepper seasoning
4 dozen butter crackers
paprika
sliced black olives (optional garnish)
watercress leaves (optional garnish)

Combine cream cheese, clams, onion juice, and red pepper seasoning. Mix well to blend. If making ahead, store, covered, in refrigerator.

Just before serving, spread clam mixture on crackers, about 1 teaspoonful on each. Sprinkle lightly with paprika; place on large cookie sheets.

Bake in hot 400 degree F oven for 5 minutes, or just until heated through but not browned.

Garnish with sliced black olives and watercress leaves, if you wish.
