LETTUCE BASKET SALAD
1 large head of lettuce, cored 1/2 cup mayonnaise 1/2 cup sour cream 1 1/2 cups diced apples 1 cup sliced pitted ripe olives 1 cup thinly sliced carrot 2 tbsp chopped red onion 1 tsp grated lemon rind 2 tbsp lemon juice 2 tsp sugar 3/4 tsp salt 1/4 tsp crushed rosemary
From the core end, cut out and chop enough lettuce to make 1 cup. Rinse remaining lettuce, gently separating and spreading leaves at core end to form a lettuce basket; chill.
Combine remaining ingredients, mixing well; add reserved chopped lettuce, and toss gently. Spoon into lettuce basket.
