LEMON PUDDING CAKE
1/2 cup flour 1/2 tsp baking powder 1/4 tsp salt 4 eggs 1 1/2 cups granulated sugar 1/3 cup lemon juice 1 tbsp butter or margarine, melted 1 tsp grated lemon rind 1 1/2 cups milk powdered sugar whipped cream (optional)
Preheat oven to 350 degrees F. Greased a 2-quart shallow oval or round baking dish or 8-inch square baking dish.
Stir together flour, baking powder and salt; set aside.
In large bowl of mixer at high speed beat eggs and granulated sugar until very thick, about 5 minutes.
At low speed beat in lemon juice, butter, and lemon rind. Stir in flour mixture just until mixed. Stir in milk just until mixed. Pour into prepared baking dish.
Place a shallow pan on oven rack; pour 1-inch hot water into pan. Place baking dish in pan.
Bake in preheated 350 degrees F oven 50 minutes or until lightly browned. Cool slightly.
Sprinkle lightly with powdered sugar and serve warm, spooned out or cut in squares, with whipped cream, if desired.
