MUSTARD-GLAZED SALMON
1 tablespoon olive oil 2 to 4 tablespoons minced garlic 1/3 cup whole-grain Dijon mustard 1/4 cup dry white wine 1 tablespoon lemon juice 1 (2 pound) salmon fillet, cut into 8 pieces additional olive oil salt and freshly ground pepper (to taste) lemon wedges (for garnish)
Preheat the broiler.
In a small saucepan over low heat, heat the oil and saute the garlic in it until soft.
Stir in the mustard, wine, and lemon juice until well combined. Remove from the heat; set aside.
Arrange the salmon on an oiled broiler pan and rub lightly with olive oil. Season with salt and pepper.
Broil for 2 minutes. Remove from the oven and brush the mustard mixture evenly over the salmon. Return to the oven and broil until the salmon is golden brown and cooked through, about 5 minutes.
Serve with lemon wedges.
