JERK CHICKEN, MANGO, AND RUBY RED GRAPEFRUIT LETTUCE WRAPS
1 pound boneless chicken thighs 2 tablespoons McCormick® Caribbean Jerk Seasoning 1 tablespoon vegetable oil 3 tablespoons fresh lime juice, divided 1 cup fresh, diced mango 1 cup chopped ruby red grapefruit 2 tablespoons minced red onion 1 tablespoon coarsely chopped fresh cilantro 1/2 teaspoon McCormick® Sea Salt Grinder 1 tablespoon lime zest 1 head Boston lettuce, washed, leaves separated Combine chicken, Caribbean jerk seasoning, oil and 1 tablespoon lime juice in a self-closing plastic bag. Turn bag to coat chicken evenly. Refrigerate 30 minutes.
Combine 2 tablespoons lime juice and remaining ingredients except lettuce in a large bowl.
Grill chicken over medium direct heat for 20 - 25 minutes, or until internal temperature reaches 180°F. Let chicken cool. Dice and add to other ingredients. Mix well.
Fill lettuce leaves with 1/4 cup chicken mixture or an amount that can be wrapped in the lettuce Wrap.
