MARVELOUS MACARONI SALAD
12 ounces penne pasta 1/2 cup of your favorite vinaigrette dressing (or more as needed) 1 red bell pepper, stemmed, seeded, and cut into 1/4-inch dice 1 green bell pepper, stemmed, seeded, and cut into 1/4-inch dice 1 cup frozen peas, thawed 1/2 cup pitted black olives, chopped or sliced 1/3 cup diced red onion 1/2 cup chopped fresh dill leaves (or to taste) 1/4 cup chopped flat-leaf parsley (or to taste) salt and freshly ground pepper (to taste)
Cook the pasta in a large pot of boiling salted water until tender, 8 minutes. Drain well and place in a large bowl.
Toss the warm pasta with the vinaigrette.
Add the remaining ingredients and adjust the seasonings. Cover and refrigerate for up to 4 hours.
Return to room temperature before serving. Add more vinaigrette as needed.
