MEDITERRANEAN TUNA AND MACARONI SALAD
1/2 cup olive oil 1/4 cup lemon juice 1/4 cup red or white wine vinegar 2 teaspoons salt 1 teaspoon pepper 1 tablespoon dried oregano 1 pound small shell pasta, cooked and drained 2 cans (6 ounces each) tuna, drained 1 cup chopped red onion 1 cup fresh chopped tomatoes 2 tablespoons drained capers 1 tablespoon chopped fresh parsley
Mix oil, lemon juice, vinegar, salt, pepper, and oregano in large bowl.
Add shells, tuna, onion, tomatoes, capers, and parsley. Mix gently. Adjust seasonings to taste.
Serve immediately or refrigerate overnight.
