Nutty Orange Relish

2 cups golden raisins
boiling water
3 Sunkist oranges, peeled and cut into chunks
3 Tbsp. chopped crystallized ginger
1 Sunkist orange, unpeeled and cut into chunks
1 cup packed light brown sugar
1 cup coarsely chopped walnuts

Cover the raisins with boiling water and let stand 10 minutes. Drain and reserve the raisins.

In a food processor or blender, combine the peeled oranges and ginger; purse until almost smooth.

Add unpeeled orange and blend until coarsely chopped.

In a bowl, combine the orange mixture, drained raisins, brown sugar, and walnuts; stir to dissolve the sugar.

Pour into sterilized 1/2-pint jars with lids, filling to within 1/2 inch of the top; cover. Will keep refrigerated up to two weeks. The relish thickens when chilled.

Makes 4 servings
