BROCCOLI, TOMATO AND CHEESE SALAD WITH BOWTIES IN AN ORANGE VINAIGRETTE
16 oz Mueller's Bow Ties, uncooked 1 1/2 cups olive oil 1 1/2 cups orange juice 12 oz ripe tomatoes, diced 12 oz Swiss cheese, cut into thin strips 1 cup parmesan cheese, grated 2 cups broccoli florets, blanched, chopped FOR THE ORANGE VINAIGRETTE: 2 tablespoons dried basil 2 tablespoons garlic, chopped 2 tablespoons granulated sugar 4 tablespoons red wine vinegar salt and pepper to taste
Cook and drain pasta according to package directions.
In a large bowl combine garlic, tomato, cheeses, basil and broccoli. Add cooked pasta and mix until evenly blended.
Combine remaining ingredients to form dressing. Toss dressing with pasta mixture; mix well. Refrigerate until ready to serve.
