CRAB CIRCLES2 cans (6-ounce each) crab, or fresh crabmeat if available
1/2 cup chopped celery
1/2 cup chopped onion
3/4 cup mayonnaise
3 cups grated Jarlsberg or Swiss cheese
6 English muffins, halved and toasted
Paprika
Preheat oven to 375 degrees.
Mix crab, celery, onion, mayonnaise and 1 cup cheese. Mound mixture on lightly toasted English muffin halves. Top with remaining cheese.
Bake until cheese is almost bubbling.
Sprinkle with paprika and serve with soup for lunch.
NOTE FROM SOURCE:This is also nice for breakfast with kiwi fruit and melon. Or serve it as an hors d'oeuvre, like a little pizza.
