MCPOLLOS
FOR THE SAUCE: 1/2 cup mayonnaise 2 tablespoons prepared Thousand Island dressing 2 sweet pickle slices, minced 1 tablespoon chopped white onion 1 teaspoon vinegar 1 teaspoon sugar FOR THE CHICKEN: 1 tablespoon olive oil 4 boneless skinless chicken breast halves 2 teaspoons chili powder 1/2 teaspoon garlic powder 1/4 teaspoon salt TO ASSEMBLE: 4 sandwich rolls 3/4 cup shredded lettuce 1 tomato, sliced
TO MAKE THE SAUCE: Combine mayonnaise, dressing, minced pickles, onion, vinegar and sugar in a small bowl. Stir until mixed. Cover and refrigerate until ready to use.
TO PREPARE THE CHICKEN: Meanwhile, brush chicken breasts with olive oil. Season chicken with chili powder, garlic powder and salt.
Broil or grill chicken until cooked through, then refrigerate until chilled.
TO ASSEMBLE THE SANDWICHES: Spread bottom half of a roll with mayonnaise mixture. Top with shredded lettuce, then chicken and finally a slice or two of tomato.
