CHICKEN AND POTATOES 5 medium potatoes 1/2 cup margarine 1 medium onion, chopped 4 boneless skinless chicken breasts halves 1 1/2 tsps. salt 1/8 tsp. pepper 3/4 tsp. oregano 1/4 Tbsp. Italian seasoning 1 Tbsp. chopped parsley
Peel potatoes and cut into 1-inch cubes. Set aside.
Melt margarine in heavy skillet. Add onions and saute until golden brown.
Add chicken breasts and potatoes. Sprinkle with salt and pepper. Cover and cook over medium heat for 15 minutes, turning often.
Sprinkle with oregano and Italian seasonings. Continue to cook, turning often, for another 15 minutes.
Sprinkle with parsley and continue to cook until chicken is done.
