OZARK MOUNTAINS STEW

2 tbsp flour
1 tbsp paprika
3 tbsp plus 1 tsp chili powder
2 tsp salt
5 cups beef cubes
3 tbsp lard
2 onions, sliced
1 clove garlic, minced
1 (28 oz) can tomatoes
1 tbsp cinnamon
1 tsp ground cloves
1 tsp dry crushed red peppers
2 cups chopped potatoes
2 cups chopped carrots

Combine flour, paprika, 1 teaspoon chili powder, and salt. Dredge beef cubes in the flour mixture and brown in hot lard in Dutch oven.

Add onion and garlic and cook until soft.

Add tomatoes, remaining 3 tbsp chili powder, cinnamon, cloves, and red peppers. Cover and simmer two hours.

Add potatoes and carrots and cook about 45 minutes or until vegetables are tender.

Servings: 8
