SWEET POTATO SALAD WITH GINGERFOR THE DRESSING:1/2 cup mayonnaise
2 tbsp honey
2 tbsp lemon juice
1 tsp grated fresh ginger
FOR THE SALAD:1 1/2 lb sweet potatoes; cooked, cubed*
4 celery stalks, sliced
1/4 cup chopped fresh parsley (for garnish)
Combine dressing ingredients. Add to sweet potatoes and celery. Chill well. Serve garnished with parsley.
*To cook sweet potatoes in
microwave; pierce and cook for 20 minutes on high.
