INDIAN-ENGLISH CUCUMBER SANDWICHES
FILLING: 1 medium cucumber 1 handful finely chopped dill 3/4 cup thick organic yogurt 1/2 cup thick coconut milk 1/4 plus 1/2 tsp salt, divided use 1 tsp vinegar Bread: White bread slices, crusts removed
Peel the cucumber and slice very thin. Place in a bowl. Toss with 1/2 tsp salt and 1 tsp vinegar. Keep aside for 30 minutes. Meanwhile, in a bowl, whisk together yogurt, coconut milk, 1/4 tsp salt, chopped dill. Keep aside.
Drain, dry and squeeze out as much water as you can from the cucumber slices using paper towels. Stir this into the yogurt mixture. Use this filling cold.
Apply on one side of a bread slice. Close with the other side. Cut in half or quarters. Keep covered with a clean damp cloth in the fridge for 30 minutes to set. Serve. |
