BLUE CHEESE BLT SALADFOR THE DRESSING:1/4 cup cider vinegar2 tbsp vegetable oil 1 tbsp lemon juice 1 tbsp sugar 1/2 tsp garlic, fresh, finely chopped 1/2 tsp pepper 1/4 tsp salt FOR THE SALAD:4 cups torn lettuce 1 medium avocado, peeled, cut into wedges 1 medium ripe tomato, cut into wedges 1/2 cup onion, sliced 1/8-inch thick, separated into rings 1 ( 11 oz.) can mandarin orange segments, drained 1/2 cup crumbled blue cheese 8 slices bacon, cooked crisp and crumbled In a small bowl stir together all dressing ingredients; set aside. On a platter or individual salad plates place lettuce. Arrange avocado, tomato, onion and mandarin orange segments on lettuce; sprinkle with blue cheese and bacon. Pour dressing over salad.
