PLUM AND SWEET ONION PIZZA
"This fruit-and-vegetable combination makes a delicious appetizer or light lunch. Serve it with tall glasses of iced tea."
3 sweet onions, thinly sliced and separated into rings 1 tablespoon course-grain mustard 1 tablespoon balsamic vinegar 1 tablespoon extra-virgin olive oil 8 fresh plums, peeled and chopped 2 teaspoons chopped fresh sage 2 teaspoons chopped fresh rosemary 1 tablespoon brown sugar 1/4 teaspoon salt 1/4 teaspoon pepper 1/2 (24-ounce) package pizza crusts 6 ounces Gorgonzola cheese, crumbled Garnish: fresh sage sprigs
Cook first 3 ingredients in hot oil in a Dutch oven over medium heat, stirring constantly, 30 minutes or until onion is caramel colored. Stir in plum and next 3 ingredients. Cook, stirring occasionally, 10 to 15 minutes or until plum is tender. Stir in salt and pepper.
Place crust on a 12-inch round pizza pan.
Bake at 400 degrees F for 8 minutes or until golden.
Spread plum mixture over pizza crust, and sprinkle evenly with crumbled cheese. Bake 10 more minutes or until cheese melts. Garnish, if desired.
