CONFETTI ORZO WITH TURKEY

16 ounces uncooked orzo pasta
4 tablespoons olive oil, divided use
1 cup diced red bell pepper
1 cup diced celery
1 cup diced fresh mushrooms
1/4 cup diced green onion
2 garlic cloves, minced
1 teaspoon cumin
Salt and freshly ground pepper (to taste)
1 pound chopped cooked turkey, diced
4 cups small broccoli florets, steamed
1/2 cup fresh cilantro

In a large skillet heat 1 Tbsp. of olive oil on medium heat. Add 1 cup of uncooked the orzo and brown.

Cook the remaining pasta with the browned pasts according to package directions. Set aside.

Using same skillet, heat the remaining 3 tablespoons of olive oil. Add red bell pepper, celery, mushrooms, green onion, garlic, cumin, salt and pepper. Cook until tender.

Mix cooked pasta, turkey, and broccoli in skillet.

Serve hot with cilantro.

VARIATION:
Add 1/2 cup vinegar and oil salad dressing, chill and serve cold.
