ROAST TURKEY BREAST WITH BARBECUE SAUCE
1 (8 to 9 lb) turkey breast, defrosted 3 tbsp butter or margarine, softened FOR THE BARBECUE SAUCE: 1/3 cup chopped onion 2 cloves garlic, minced 2 tbsp vegetable oil 1 (12 oz) jar apricot preserves 1/4 cup chili sauce 1/3 cup wine vinegar 1 tsp hickory salt (optional)
Preheat oven to 325 degrees F.
Place turkey breast, skin side up, on rack in shallow open roasting pan. Rub skin well with butter. Insert roast thermometer in thick part of breast, not touching bone.
Roast at 325 degrees F for 2 1/2 hours, basting frequently with drippings.
Brush with Barbecue Sauce and continue to roast, brushing occasionally with sauce, 1 to 1 1/2 hours longer or until juices run yellow when breast is pierced with a fork. Roast thermometer should register 180 degrees F.
TO MAKE THE BARBECUE SAUCE: Saute onion and garlic in oil in a small saucepan until soft. Stir in preserves, chili sauce, vinegar and salt. Simmer for about 20 minutes.
