SLOPPY TURKEY SPUDS
4 (10 ounces each) potatoes 12 ounces ground turkey 1 medium onion, chopped 1 medium green bell pepper, chopped 1 cup sliced mushrooms 1 jar or can (14 or 15 ounces) marinara sauce or other vegetarian spaghetti sauce Salt and pepper, to taste 1/4 cup chopped parsley 1/4 cup grated Parmesan cheese
Pierce potatoes with tines of fork; microwave on HIGH 20 to 22 minutes until potatoes are fork-tender.
Meanwhile, in large nonstick skillet over medium heat saute turkey until no longer pink, about 6 minutes. Add onion, bell pepper and mushrooms; saute, stirring, 3 minutes.
Stir in marinara sauce; bring to boil, reduce heat, cover and simmer 10 minutes. Season with salt and pepper; stir in parsley.
Place potatoes on 4 plates; split and fluff. Top potatoes with turkey mixture and cheese, dividing equally.
NOTE: Microwave cooking times are based on a 700-watt microwave. Adjust cooking times to your own oven.
