BAKED POTATOES ITALIAN STYLE
6 medium red potatoes 1/2 cup olive oil 1 tablespoon rosemary salt and pepper to taste
Peel and cut potatoes in wedges, and soak in cold water for 1 1/2 hours.
WHEN READY TO COOK: Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil (optional).
Drain potatoes and dry well. Place potatoes in bowl, add olive oil, rosemary, salt and pepper, mix well. Place potatoes in a single layer on a baking sheet.
Bake at 400 degrees F for 25-30 minutes or until potatoes are golden brown. Serve hot.
