CASHEW CRESCENT COOKIES3/4 cup butter, softened
1/2 cup white granulated sugar
1 egg yolk
1 1/2 cups all-purpose flour
1 cup chopped dry roasted cashews
1/2 cup sifted confectioners' sugar
Preheat oven to 350 degrees F. Grease cookie sheets.
Cream butter and granulated sugar in mixer bowl until light and fluffy. Add egg yolk and stir until smooth. Add flour and cashews, stirring until a soft dough forms.
Shape by teaspoonfuls into crescents 1 inch apart on prepared cookie sheets.
Bake at 350 degrees F for 12 to 15 minutes or until edges are light brown. Cool on cookie sheet for 2 minutes.
Roll warm cookies in confectioners' sugar. Remove to wire rack to cool completely.
Yield: 36 cookies.
